INGREDIENTS FOR 2 SERVINGS:

- 2 packages of Riso Venere Rapid Poke
- 300g of fresh salmon
- 200g of carrots
- 200g of purple carrots
- Extra Virgin olive oil, salt and black pepper
- 8 Pachino tomatoes
- 30g of washed and dried arugula
PREPARATION TIME: 20 minutes
PROCEDURE:
- Prepare the Venere rice as indicated on the package.
- Peel the carrots and cut them into thin slices.
- Season both the orange and the purple carrots with Extra Virgin olive oil, salt and pepper.
- Cut the cherry tomatoes into rounds and dress them with Extra Virgin olive oil, salt and black pepper.
- Cut the salmon into small cubes and blanch it in a non-stick pan with Extra Virgin olive oil, salt and black pepper.
- Season the Venere rice with a drizzle of Extra Virgin olive oil
- Compose the Poke by placing Venere rice, carrots, arugula, tomatoes and salmon in a bowl.
