INGREDIENTS FOR 4 SERVINGS:

• 230g (8oz) rapid Venere rice
• juice of half a lemon
• 1 tsp fine salt
• 1/2 tsp ground black pepper
• 1/2 tsp ground cumin
• 2 tbsp extra virgin olive oil
• 2 medium ripe tomatoes finely chopped
• 1/2 cucumber finely chopped
• 1/2 large red bell pepper finely chopped
• 1/2 medium red onion finely chopped
• fresh parsley finely chopped
• dried mint
• 30g (1oz) roasted almonds coarsely chopped
• 100g (4oz) diced feta cheese

PROCEDURE:

  1. Rub the pouch and heat it up for 2 minutes in the microwave.
  2. Empty the pouch and allow Venere rice to cool.
  3. Combine the lemon juice, salt and pepper, cumin and olive oil in a small bowl. Whisk together and allow to sit.
  4. In a very large bowl, combine all of the veggies. Top with the cooled rice and the dressing. Toss to combine then top with the almonds and feta.
