INGREDIENTS FOR 2 SERVINGS:

    • 2 packages of Riso Venere Rapid Poke 
    • 300g of fresh salmon 
    • 200g of carrots
    • 200g of purple carrots 
    • Extra Virgin olive oil, salt and black pepper 
    • 8 Pachino tomatoes
    • 30g of washed and dried arugula

    PREPARATION TIME: 20 minutes

PROCEDURE:

  • Prepare the Venere rice as indicated on the package.
  • Peel the carrots and cut them into thin slices.
  • Season both the orange and the purple carrots with Extra Virgin olive oil, salt and pepper.
  • Cut the cherry tomatoes into rounds and dress them with Extra Virgin olive oil, salt and black pepper.
  • Cut the salmon into small cubes and blanch it in a non-stick pan with Extra Virgin olive oil, salt and black pepper.
  • Season the Venere rice with a drizzle of Extra Virgin olive oil
  • Compose the Poke by placing Venere rice, carrots, arugula, tomatoes and salmon in a bowl.
